These olive trees were pruned using the polyconic vase method, a very common pruning method in the small olive groves planted in recent years in the Tuscia Viterbese, a sub-region of central Italy, an area where olive and oil culture are deeply rooted in local history and culture. The olive tree is a precious resource and a real bulwark against the loss of agricultural land due to speculation or hydrogeological instability, mainly due to its character as a multi-annual and permanent tree crop.
